yeah, overhauling an LSD would probably consist of taking it apart, replacing the clutches, and putting it all back together according to spec, making sure all the proper clearances are good. it is not really that easy to do yourself, you have to know what adjustments affect which clearances and specs and such, and you need the proper tools to take measurements and make adjustments without screwing up. i'd say just replace the fluid often and you won't need to get it overhauled so often, but it's a good idea to get it done by a professional or at least someone with the proper experience and equipment.
