Nice setup, but i am not sure it will work correctly. These sensors makes average measurements, and the exhaust gases come by pulses. You may be reading 50°C less than what you really have, this is the reason why people only use one, where the exhaust tubes join.

Anyway reading are whatever the car is mapped for ... Turbos have their own limit, most of the time it is around 900°C continuous, 950°C on spike. See the manufacturer for that. If the temp is low, the turbo will spool poorly (it works by exchanging heat), so you can ask your tuner to dial higher temps in . Just remember it is cold out there, so temps wont be that high.
