You don't use the same sensor as stock. When you buy an aftermarket gauge, it comes with its own sensor. For instance, my sensor is in the upper radiator outlet and I know exactly how hot the coolant in my system is right when it comes out of the engine.
As for how it helps, I know EXACTLY how warm my engine is running. You on the other hand are trusting some crappy stock gauge. The fact that your gauge is reading "cold" when you are going 60 just doesn't sound right. One other thing that could be wrong is that your thermostat could be stuck open. When's the last time you replaced it?
