Buy an OE thermostat, install it correctly. There's no reason to keep replacing them unless you're doing something wrong.

Removing it entirely will allow too much coolant flow and keep the car from properly warming up. On a cold day, engine tolerances won't be met since the block is still cold, and the water doesn't have enough time to absorb heat within the block anyway.
