I'm pretty sure you're supposed to check your oil after the engine has been off a while. Not cold but not hot either. The sooner after you shut it off the more you have to compensate for oil that is still up in the galleries or that hasn't dripped back down to the pan. Checking it while running seems like a pointless and innaccurate exercise.
As for the idea that manual cars don't come with a dipstick, is that all 240's or just S14's, because my S13 has one? Maybe it's just your car that doesn't have one and the previous owner was lying to you. AFAIK all 240's should have a dipstick, or put another way, that's the first time I have heard that they might not.
