when I unboltd my driveshaft, I put a really big, really long screwdriver though the slots and that way when I turned the bolts the screwdriver wedged against the floor pan and didn't turn. Then I just used a ratchet to get the bolts off, though I had to really yank on it to loosen em up. Use some loctite when you put em back on, especially if you sprayed pb blaster.
