I did something similar removing the "non-essentials".
Easiest way to keep it neat is to start at the connectors going to what you don't want. (ie, remove the read speaker, take the plug and as you unwrap the harness pull that connector/wiring out)
This way your not cutting in the middle then trying to find where it goes.
Work from the ends, back to the huge junction in the dash, then just pull the pins out.
I will admit though, it was crazy and took quite awhile to get everything finished up. I did what i wanted, but honestly, you are better off just leaving it.
