Yeah it is good for the cold weather.
I think good pho is based on good broth.
I don't think its the best soup-noodle dish ever, but it is surprising hard to get sick of.

If your dousing it with a crapload of sauce, it probably means the broth is no good, or you can't really appreciate the basic flavours of the broth. It's like dousing coffee with sugar & creamer. understandable if your drinking 7-11 coffee, but maybe not so much if its good stuff. personally I just like to throw in a few fresh green jalapenos and some mint leaves they give you. Stir it in, and eat immediately. Usually I have it with brisket instead of the sliced beef.

There are a lot of other fun Viet Dishes too. I love the lemon-grass pork chops, egg-loaf thingies, viet curries w/ baguette, and the the bahn xeo (sp?) crepes. 7 styles cooked beef is also interesting.

Out here in socal, i like the Golden Deli in SGV or Brodard in West-Minister.
