ummm move the egt to the downpipe. You are looking for a difference in temperature here, not the actual temperature itself.... maybe for tuning purposes u need the actual tempperature, but it could be approximated. Plus the exhaust manifold (especially cast iron) is not something i would mess with and it costs ~3-4 times more than yer dp (in case u screw it up). Oh and u must have egr unless u are ok with check engine light always on and emissions being much worse. Its definately much easier to get a bung for the egr on then mess with the sensors...
and why would you need 2 sensor bungs? I'd guess you can use the o2 sensor hole when u tune with the wideband sensor and then replace with a normal sensor once your done.... or you plan on running 2 sensors?
