I guess it depends on the diff as well.
My Cusco in my S14 locked super hard, super fast.
The Nismo in my s13 was less aggressive.
With the e-brake you mentioned earlier... Once you use it a lot, you will understand that it's really neat for adjusting where your car goes and how it slides. It seems unpredictable at first, but give it more and more time and you will be able to guide the car wherever you want with the hand brake.
