To answer the question, No the Z-Fever VQ35swap harness solution will not also manage the speedo, tach, or other gauges. Not just with this harness service but we have figured out how to make them work already. It takes a few things.
We use an MSD tach adapter to change the signal and then another sign wave adapter to convert it again and adjust the tach signal to be accurate.

As for the speedo, the newer cars use the ABS system to acquire the speed signal. It then goes through the ECU's CAN-BUS system then to the speedometer.
If your car does not have ABS then you need to get a rear diff that does like a J30, Z332, S15, R32, etc... and install it. Then we make a wiring harness that powers up the ABS sensor on the diff and use a square wave adapter to convert that signal to what the speedo needs and adjust it accordingly so that the speedo is accurate.
This is what our harness looks like. It only requires someone to hook up 3 wires.
