All depend on what you're trying to do with the car.
Reasons you want camber: Clear fenders and less traction if you have under powered car.
Reason why you DONT want camber: Max traction, specially on high HP car.

Personally, the whole point of going overfenders is so you dont have to run camber or atleast less of it.

Offset has absolutely nothing to do with brake clearance calipers. How much offset you need to clear coilovers will depend on the coilover you have. Some sets are just fatter/thicker than others.
