The car I'm looking at has 50mm rear overfenders and 20mm fronts, but stock wheels. I couldn't find anything really helpful that I understood, other than about an 18x9 in the front and 18x10 in the rear. what offsets would I need? I was looking at a set of xxr 551's that are 18x9.75 +36 would those work?

9.75" +36mm offset fits decent on stock body. With those overs you'll have, they would be sunken way inside the wheel wells. If you have a bunch of friends who can lend you hands, ask or borrow them some wheels to do a test fit on your S14 and go from there. That, you'd get the idea on what wheels sizes you'll have to order.
