In for comments since im in a similar situation. I've got circuit sport fan controller and im seeing anywhere between 87-94c(188-201) driving around. I drive a bit on highway from college for maybe 15mins and see it hit around 94 with/without AC sometimes higher depending on how long I drive. Seen temps hit around 97 and that one night did a good amount of city driving but on long main road going 50-60 for 20 mins then basically hoped on the highway right after to do the same drive from school to home. built ka-t big single got 200 miles left on break in then back on e85 and 1050x IDs for a nice 400whp.

50/50 no water wetter (have a bottle and im 90% sure I still have a few air bubble somewhere)

I think your best bet is to do a smaller fan hooked up to the condenser unit like oem fan and then do an oil cooler. The higher temps really at that point have nothing to do with coolant but more oil pressure/rpm because if youre driving on 95 or turnpike you should be doing a good 60-80 and with our gearing we a reving the piss out of it from 3-4k

I know once I sort out this leak in my AC since it was bliss having it for a few days I'd want to cut up my fan shroud to do the bigger mishimoto race fans along with an oil cooler plus rad cover. Also switched from chuki front to type and plan to do some r33 vents and have the cooler by the pass signal light so whole front should get a ton more air. Want to maybe drive up to tails of dragon from south fl which is a pretty decent drive around november/december. Then after that maybe try go up to new york.
