I think the best method would be to try it.
There are tons of variables involved like where you live, what season it is, if your car is a daily or track only, if you have good ducting, etc.
If that setup allows you to reach operating temps, and keeps the car cool when flogged, then I'd say go with it. If it stays cold, switch back to an OEM size water pump pulley.
