If you don't want to address someone's gender, don't. "They" or "you" works just fine. "Thank you for the great service" is perfectly normal. Everyone gets bent out of shape about pronouns but the vast majority of the time that you're addressing someone, you're already using the right ones.
From my conversations, most people are also perfectly fine with being accidentally misgendered- they take offense when you're misgendering them after being corrected.
