Air con's one thing i can understand livin w/o but the entire HVAC system, i'm missing something i think.

Ditching the HVAC also frees up HP lost through parasitic drag from the compressor

as for the defog my post above covered that all you need is the defog ducting and a fan and you have that covered

I have another car to be luxurious and fast with I stripped this because I want a nasty car for raising hell and frightning old people and to perform some track duty with not to mention i have a few cars with no air/con already and even in the 100 degree heat and high humididty out here in the midwest in summer I still drive them all you just have to adjust to it. It wouldn't matter anyways for me though cuz my car has a sunroof hole but no sunroof right now as well so having air doesn't matter much anyways
