1080ti still does pretty well. Mine gets around 55fps avg give or take on 3440p ultra settings with AC Valhalla. i'm somewhat tempted to go 6900xt but that would be just so that I can upgrade to a 4k monitor.
but yes I can empathiize how these paper launches and lenghtly delays have been pretty frustrating. to be fair covid has screwed up a lot of stuff this year. even a set of dunlop z3 tires, something readily available at other times took me over 3 months to get.
