I've never tried to releather one

But way back in the day I had a Nardi that a thief at some point tried to steal (cut it all the way down to the metal) so it had a fat chunk missing

Since the wheel was super beat I just filled the hole with padding then got that steering wheel wrap kit from Autozone...its like a full steering wheel with stitches and you gotta weave it then tighten

Obviously that's a bit ghetto, but the wheel was super beat so I didn't see the need to put that much money into getting it redone

I was rather willing to just wait and get a new Nardi later

But you might as well just pick up the phone book or google reupholstery shops in your area

I figure since its a fairly wide spread service, pricing must be pretty reasonable

I re-covered mine a while ago. Ill try to find pix. It was quite a learning experience, but the neXt one I do will be much better. Getting the stitching even was quite difficult. But it only cost me about $40 for a shit ton of suede, needles and thread, and a new thimble.
