What the hell are brake shims? what are they used for and do i need them? also i intend to also do the swap the rears, which Master cylinder would be the best one to swap out the stock one with?

I think your talking about the metal clip that goes on the outside of the pad. Yes you'll want them.

I dont know exactly what they are for, but i think they help make the breaks not squeak.
