Was wondering since the European clusters read to 160mph do they have a different speed sensor than the JDM and USDM cars? I read somewhere that the JDM and USDM clusters would stop working at 144mph because at that point the sensor doesn't output a correct signal?

No. Same sensor as every other market, the gauge is just made to read higher.

I had a JDM sensor and I used it both on my USDM,JDM and now UKDM cluster and they all work the same. I haven't been over 144Mph though.
