what type of thermostat do you have in the engine?

if its the OEM thermostat, it should be keeping the engine at around 170...

where is the temp probe mounted? if the wire gets hot enough, it can cause some extra resistance causing false readings..

if your at 200, get a lower temp thermostat, and make sure its bled really well

Yah it doesn't seem like its opening all the way for the fact that it gets to 200 in about ten mins of idling.

You will get mixed opinions on what the temperature should be. People come from many different locations with different climates.

Firstly, try 'burping' the system. Run the car with the rad cap off for a while. This will allow air to find its way out. Also, some Nissan engines have a 'bleeder' for the coolant somewhere on the intake manifold.
