Water Temp Gauge

so i thought this was pretty weird but on the crazy hot days recently.....my water temp gauge will be at all the way cold while driving but the second i depress the clutch to coast or whatever, it will go to the middle of the gauge and then when i accelerate, wha la, back to cold.......is this normal or some or good at all for the car, should i be looking for something, i haven't noticed any difference in the ride of the car
