So should i get an adjustable thermostat? I was about to order one from summitracing.com, but they are back ordered until late august. What is good about an adjustable thermostat? Won't you always want to keep your car at 170*F anyways ?

Not always. Sometimes, like when your driving in heavy traffic you may want to adjust it because no air is flowing through the radiator naturally. The water in the radiator doesn't really cool down without airflow so you will want the fan to be on almost constantly.
