Its to cool the intake. A colder charger of air is better cuz its more dense than warm air. And more air + more fuel = more power.

Actually they DO spray nitrous oxide on (not in) the intercooler. a more popular choice (since it's cheaper) though is to spray water. Getting the intercooler fins wet allows it to dissipate more heat, faster. That's the same reason (along the same lines of) why we sweat when hot.

As for spraying nitrous oxide-- I think mainly it's beacuse a highly pressurized substance will cool down dramatically when released into a low pressure area-- sort of like how a can of hair spray (or spray paint or airbrush propellent) gets cold when you spray it.
Whether N20 has better 'cooling' properties than water though, I'm not sure. I imagine it must, or ppl would just put a bottle of pressurized water/air and spray that instead.

A question I've always had about ice on your intake manifold/runners is this -

Does the sudden temperature change (shock) have any adverse effects on the metal? I imagine on the atomic level, something must be "not good" for it to go from maybe 150 or 160 deg (more?) all the way down to 45 or so degrees...
Or am I too scarred by the time I drank ice water out of a cup then immediately washed it under really hot water?

same thing happened to me. took a glass out of the dishwasher (it was still hot) and put ice water in it to drink...the glass totally cracked. that's glass though, i wouldn't think it would be bad for your car....unless you have a glass car.

well i think that the engine has a higer heat capcticy than the bag of ice. i mean that one bag of ice will melt before the engine is engine close to being cool....now if u had alot of water the manifolds would crack.
