Ideally, you oil should be around 180-200* or right around the same operating temp as your coolant. Conventional oil starts to break down around 240*. Synthetics are known to support sump temps over 300* but additive packages breakdown faster at these temps, so you'd be changing the oil more often at 300* vs say 250*.
