You could do that, but it wouldn't be worth it.
If you're "knocking off" part of the MAFS signal, then you're basically cutting off the upper limit also. For instance, say you knock off 1v of the signal.... what happens when your MAFS is maxed (at 5v) you're only sending a 4v signal, and the injectors will inject at the 5v stock injector equivolent. But, you can never get anything more than that 4v signal, since the MAF is maxed out at 5v (no, it won't go to 6v AFAIK) so you'll never get any more fuel than the stock setup.
