I <3 ramen, was at ippudo in ny a few weeks ago. mmm tonkotsu ramen is amazing

chashu is good but kakuni is amazing

If anything is legit ramen in the states, it would be that place. Buddy of mine in Japan sent me fresh ramen kit made by Ippudo and that shit is just as on point as the real shit. Just had to make my own cut up pork loin and fresh garlic. The box came with fresh ramen (not that hydrated shit), pickled veggies, dried seaweed, soup concentrate. Man, I want some now...if I wasnt so fucking far away from NYC, I'd drive my ass out there now.

I just found out that tendon is 99% fat free... For some reason I always though it was similar to fat... DEFINITELY getting it in my next bowl.

Umaido has everything you listed, spins their noodles fresh in the front window and $1 kaidama. I'm sure nothing beats JDM though. They also have chicken-only broth for us non pork eaters.
