cooling fans ...

Ok i am doin some research on radiator fans . Ok i have the koyo for my sr and i know flex a lite offers the dual fan . But they come in 2 options with or without the coolant temp switch . But heres my question is this if you wire the fan in shouldnt the cars coolant temp sensor kick the fans on as needed ?
I have heard people say just wire them in all the time ... but why ?
Also whats the advantage of going with the coolant temp switch if not just going with an hks dual fan controller.... any thoughts would be greatly apprecieated.
